It is rare to see offal on American menus, especially outside of ethnic eateries. Calves liver, one of my favorites is very rare; I have only seen it once before in the US. On Wednesday I went to a bar and grill that bore the name “Buttercup Grill”. The menu included the staples of American grilled food, but it also had calves liver. It was an excellent option, with grilled onions, bacon, and creamy mashed potatoes.
